Makes about 2 cups
Tzatziki, a tangy, yogurt-based sauce, can be used for a lot more than just souvlaki. It is also an excellent accompaniment to hot, spicy foods and can be used as a topping for a burger, particularly one made with ground lamb. As an appetizer, tzatziki is great served alongside hummus, to be scooped up with pita triangles and even as a dip for vegetables. It’s tangy and refreshing and bursting with flavour.
2 c. plain yogurt (preferably Balkan-style)
1⁄2 tsp. salt
2 tbsp. fresh mint, finely chopped
2 tbsp. fresh parsley, finely chopped
1 tbsp. lemon zest
1 to 2 garlic cloves, minced
1. Spoon the yogurt into a sieve lined with cheesecloth or a yogurt strainer. Allow to drain for 2 hours in the fridge.
2. Place the drained yogurt in a bowl. Add the salt, mint, parsley, lemon zest and garlic. Allow flavours to blend for at least 2 hours before serving.
