Lemon Curd

Serves 8

Lemon curd is a wonderful filling for tarts or to serve with pound cakes.

6 egg yolks
1 c. sugar
1/3 c. fresh lemon juice
1/2 c. unsalted butter
1 tbsp. lemon zest

1. Strain the egg yolks into a saucepan. Add the sugar and lemon juice.
2. Cook, stirring constantly until the mixture thickens and coats the back of a wooden spoon.
3. Remove from the heat and add the butter and zest.
