Irish Wheaten Bread

Makes 1 large loaf

This wonderful recipe originated with Winnie Wills via her brother George Stinson of London. The bread would be classified as a “quickbread” since there is no yeast. It is also known as Irish Soda Bread. It is dense and moist and delicious served warm from the oven. Partner it with your favourite soup in the middle of winter.

2 c. whole wheat flour
1 c. all-purpose flour
1/2 c. rolled oats (quick cooking)
1-1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tbsp. butter, cut into small bits
1-1/2 c. buttermilk
3 tbsp. water

1. In a large bowl, combine the flours, oats, salt, baking soda and powder. Work the butter into the dry mixture using your fingertips.
2. Add the buttermilk and water, and combine.
3. Turn the dough onto a well-floured surface and knead lightly for a minute or two.
4. Form into a round loaf about 3-in. high.
5. Place on a baking sheet and, with a sharp knife, cut an X in the middle. Place in a preheated 425˚F oven for 15 minutes.
6. Reduce heat to 375˚F and bake an additional 30 to 40 minutes until the bread is golden.
