Indian Red Lentil Dip

Makes 2 -1/2 cups


1 c. red lentils, rinsed and drained
1.5 c.  water
1 tbsp. extra virgin olive oil
1/4  to 1/2 tsp. cayenne pepper
1 tsp. garam masala
1 tsp. cumin seeds, roasted and ground 
4 tbsp. lemon juice
1 tsp. lemon zest
1 clove garlic, minced 
1 tsp. salt

1. Place the lentils and water in a small saucepan. Bring to a boil.
2. Reduce heat to a simmer and cook until the water has been absorbed and the lentils are soft.  Remove from heat and let cool.
3. When the lentils are cool, place in a food processor along with the oil, cayenne, garam masala, cumin, lemon juice, zest, garlic and salt.
4. Process, using the pulse button until the mixture is smooth.
5. Check seasoning. Add salt if necessary.
6. Serve with warm naan bread or whole wheat pita wedges.
