Fattoush is a delicious Middle Eastern bread salad. This salad really shines in the summer when all the local greens and herbs are available. It is a great salad to make when you find yourself faced with some stale pita.
3 pita bread
3 tsp. olive oil
1 large garlic clove
8 c. romaine lettuce, chopped
1 small English cucumber, diced
1 c. green onions, chopped
3⁄4 c. parsley, finely chopped
1⁄4 c. mint leaves, finely chopped
3 medium ripe tomatoes, seeded and diced
1/3 c. extra-virgin olive oil
1/3 c. fresh lemon juice
salt and pepper
1. Preheat oven to 375˚F. Brush both sides of each pita bread with olive oil. Cut garlic clove in half and rub firmly over the pita breads. With a sharp knife, cut into strips. Bake in oven until toasted (about 10 minutes). Remove and set aside.
2. In a large bowl, combine the romaine lettuce, cucumber, green onions, parsley, mint and tomatoes.
3. In a small bowl, whisk together the olive oil and lemon juice.
4. Break the pita bread strips in pieces and toss with salad. Drizzle dressing over and toss well. Season with salt and pepper to taste.
5. Serve immediately.
