Cajun Meatloaf

Serves 6

This meatloaf is quite spicy. A dollop of low-fat sour cream or yogurt is a good accompaniment.

Cooking Tips
The nice thing about this recipe is you can use either lean ground beef or ground turkey. Meatloaf can be made ahead and warmed before serving or served cold.

2 tbsp. butter or vegetable oil
1 medium onion, diced
1⁄2 sweet green pepper, diced
1 stalk of celery, diced
2 garlic cloves, minced
1 tsp. salt
1 tsp. pepper
1⁄2 tsp. cayenne pepper
1⁄2 tsp. dried thyme
1⁄2 tsp. ground cumin
1 bay leaf
1 tbsp. Worcestershire sauce
1 tbsp. hot pepper sauce (such as Tabasco)
1⁄4 c. milk
1/3 c. ketchup
1-1⁄2 lbs. lean ground beef or turkey
1 c. bread crumbs
1 egg, slightly beaten

1. In a large skillet, melt butter or heat oil over medium heat. Add the onion and cook until softened.
2. Add green pepper, celery and garlic and cook until the pepper is soft. Stir in the salt, pepper, cayenne pepper, thyme, cumin, bay leaf, Worcestershire and hot pepper sauce. Simmer for 5 minutes.
3. Stir in the milk and ketchup. Remove from heat and let cool. Remove bay leaf.
4. In a large bowl, combine the vegetable mixture and bread crumbs with the ground beef (or turkey) and egg.
5. Place in a large loaf pan and bake in a preheated 350˚F oven for 75 minutes.
6. Drain any juices from the meatloaf. Let meatloaf stand for 15 minutes before slicing.
