Bavarian Apple Torte

Serves 10 to 12

This Bavarian Apple Torte recipe was given to me by my sister-in-law Vicki many years ago. You can also make it with blueberries. If you have a food processor, this recipe is very quick to prepare.

Pastry
1 c. butter, softened
2/3 c. sugar
1⁄2 tsp. vanilla
2 c. all-purpose flour
1/2 tsp. baking powder

Cream Cheese filling
2 8-oz. (250g) pkg. of cream cheese, softened
1⁄2 c. sugar
2 eggs
1⁄2 tsp. vanilla

Apple Topping
6 to 8 c. apples, peeled and sliced
2/3 c. sugar
1 tsp. cinnamon

1. To make the crust, cream the butter and sugar in a medium mixing bowl. Stir in vanilla. Add flour, baking powder and mix well. Spread on the bottom and two inches up the sides of a greased 9-in. springform pan. Bake in a preheated 450˚F oven for 8 minutes. Remove from oven and cool.
2. To make the filling, combine the cream cheese, sugar, eggs and vanilla. Beat with an electric mixer until smooth. Pour evenly over pastry.
3. To make the apple topping, combine the apples, sugar and ground cinnamon in a bowl. Spoon over cream cheese filling (or arrange decoratively).
4. Bake at 450˚F for 8 to 10 minutes. Reduce temperature to 400˚F and continue baking for 20 to 25 minutes. Cool before removing from the pan.
5. Refrigerate.
6. Remove from refrigerator at least 30 minutes prior to serving.
