Baked Apples with Honey and Yogurt
Serves 6
Baked apples give all the comfort of apple pie, without the pastry. Instead of ice cream or whipped cream as an accompaniment, use non-fat, Greek-style yogurt that has been sweetened with a bit of honey and cinnamon.
3 large baking apples
4 tbsp. chopped walnuts
2 tbsp. golden raisins
2 tbsp. brown sugar
6 apricots, chopped
1/2 tsp. cinnamon
3 tbsp. melted butter
3/4 c. non-fat Greek yogurt
Pinch of cinnamon
2 tsp. honey
Honey for drizzling
Mint for garnish
1. Preheat oven to 375 F (180C).
2. Cut apples in half lengthwise. Using a teaspoon, remove the core leaving a large enough cavity to place about 1 tbsp.(15 ml) of filling. Cut a very small sliver from the bottom of the apple so they sit flat in the baking dish.
3. In a small bowl, mix together the nuts, raisins, brown sugar, apricots and cinnamon along with 2 tbsp. (25 ml) of the melted butter.
4. Brush each cut side of apple with some of the melted butter.
5. Spoon the nut-fruit mixture into the cavity of each apple half. (It will be very full.) Place in a baking dish. Drizzle any remaining butter over the fruit.
6. Tent with foil and bake 30 minutes. Remove foil and bake a further 10 to 15 minutes or until the apples are tender.
7. While the apples are baking, combine the yogurt, cinnamon and honey in a bowl. Set aside.
8. When the apples are baked, place an apple half on each plate. Drizzle with honey. Place a dollop of the sweetened yogurt on top or to the side. Garnish with a mint sprig and serve.
